Our 4 Kinds of 'Q:
Kansas City:
Our most popular kind of 'Q is our most homegrown... With lots of our delicious sweet and sticky molasses-based sauce slathered on burnt ends, ribs, brisket and sausage, it's the kind of meal that'll make you start screaming for wet naps.
Texas:
Unlike KC, the story isn't the sauce.. It's all about smoke on a cow. Brisket is the main attraction here - slow smoked, juicy, with that perfect bark on the outside. Folks in Austin'll shoot you if you touch it with any kind of sauce, but we like just a little drizzle on our sammiches.
Memphis:
Pig is your friend when you head down Memphis way. Pulled, or on a rack of ribs, the smokey goodness with the unmistakeable rub will bowl you over the minute you put it into your mouth. Want to juice it up a little? The sauce is thinner than KC, but has just enough sweet to make it work.
Carolina:
Probably the furthest you can get from KC style is Carolina. Without any sauce applied during smoking the piggy parts, this is dominated by chopped meats, and a thin, vinegar-based sauce thrown on at the very end. Tangy, smoky, and unique, Carolina-style is the best of a hog on a plate.
BONUS ROUND- Manhattan:
We kind of think that birds take to smoke real nice. We have a great Pulled Chicken platter or sandwich! Slow smoked, rubbed, then double smoked and tossed with our original BBQ sauce. You've never had chicken this good. Even that one colonel dude comes here on Sundays.
